Today’s lunch was a delicious concoction of onions, garlic, spinach and tempeh, drizzled with whole grain dijon mustard from Trader Joes.
1 small onion, chopped
1 clove garlic, chopped
half a package of tempeh, cut into strips width-wise
two servings your favorite dijon mustard
2 cups fresh, rinsed spinach
Simply chop your sweet onion and a clove of garlic and sautee on medium-low with just a bit of water in a non-stick pan. Add strips of tempeh when onions and garlic are hot and becoming translucent. Drizzle whole grain mustard, two servings, all over the pan.
Mix with heat resistant spatula and at the last minute, add two cups of spinach and sautee until spinach wilts just a tad. Transfer to your serving dish and enjoy. A quick, fuel good lunch packed with protein and calcium!
